A lot of escape rooms state 3 – 6 or 4-8, but you physically only need 2 in the room.

There wasn’t a stranger to kidnap? Ooh, I know! Ask a worker to play under these conditions: the worker does nothing until given specific instructions. Unless you had to go into three different rooms, it could work.
It’s hard to get workers to join in an escape room… 🙁
